Frugal Foodie: Pork Sausage Breakfast Scramble

Feeding a family of five breakfast for $2.50 is why you should shop for whole foods.

Back before we made the commitment to eat better, my husband discovered this frozen breakfast product that was basically a breakfast scramble in a bag. It was about 16 ounces of diced onion, ham or sausage, bell peppers, and potatoes for around $4. He would add four or five eggs to the mix and make breakfast for the whole family.

This weekend, he started to grab a package of it while we were shopping and I was horrified to see the price had gone up to $6! (No, I'm not cheap, just really frugal.) When I thought about it, I realized that we could make the same dish for a lot less because we already had most of what we needed in our pantry. 

In the end, we only spent $1.19 on pork sausage. This is exactly why it pays to stock your pantry with whole foods rather than prepackaged, preprocessed foods. Because potatoes, onions, eggs and bell peppers were already part of our standard pantry list, it was easy and inexpensive to add the pork sausage (and it was on sale!). Since we used the potatoes, onions and bell peppers in several dishes over the course of the past week, our actually cost for this dish was really only about $2.50 to feed our family of five. And everyone had seconds too.

Pork Sausage Breakfast Scramble

5 eggs

16 oz package country sausage

½ large onion

½ large bell pepper

3 fingerling potatoes (or 1 large Idaho potato)

Canola oil (or 2 tablespoons butter)

Peel the potatoes and chop into small pieces (about the size of hashbrowns). Place in a microwave safe dish and add approximately one teaspoon full of water. Microwave for two to three minutes or until the potatoes are fork tender. Set aside.

Dice up the onion and bell pepper and set aside.

Crack the five eggs into a bowl and whip lightly with a fork or whisk. Set aside.

Heat a skillet on high and brown the pork country sausage, making sure to break a part any large chunks as you stir. Remove the sausage from the skillet. Pour most of the oil from the skillet, but leave a little of the pan drippings to use for sauteing the vegetables. Alternatively, you can use a little butter or canola oil to saute the vegetables, if you prefer.

Saute the onions and bell peppers in the skillet until the onions become slight translucent. Then add in the diced potatoes. Continue to saute on medium high heat until the potatoes develop a light golden brown crust. Next add in the crumbled country sausage and stir for a minute.

Push the mixture to one side of the skillet and pour in the eggs in the open space. Allow the eggs to set slightly and then stir into the veggie and sausage mixture. Continue stirring while the eggs cook, approximately one to two minutes. Serve immediately.
