Tangy Fresh Carrot Salad
Summer is the best time to enjoy this seasons' freshest veggies. Crunchy and good, this is one excellent way to add carrots to your lunch or dinner table. Loaded with tangy flavors, vitamins and a boost of fiber, this makes an ideal summer salad.
Ingredients
2 Cups Grated Organic Carrots
1 Tsp Ginger Garlic Paste
1 Tsp Fennel Seeds
1/2 Tsp Orange Zest
1 Tsp Julienned Mint Leaves
1 Tbsp Butter/Ghee
1 Tsp Sugar
Juice Of 1/4 Orange
Pinch Of Salt
Dash Of Cracked Pepper
Method
In a small saucepan, heat the butter or ghee until it melts. Add the fennel seeds and allow it to sizzle. When they become fragrant, add the ginger-garlic paste stir in, and remove from heat. Allow this mixture to cool. In a large separate bowl, spread out the grated carrots. Sprinkle a teaspoon of sugar onto this. Pour the fennel seasoning into the carrots; add the orange zest, mint leaves, orange juice, salt and pepper. Toss this mixture generously. Cover and chill for at least 1 hour before serving. Serve with sour cream or a dollop of unflavored Greek yogurt.
