Sour Cream Meatballs, Great Family Dinner

Swedish meatball recipe can be prepared in advance and frozen.

I don’t know about you, but I’m always on the hunt for something new to fix for dinner. There are lots of good options but sometimes it’s hard to come up with a fresh idea. 

Ground beef is always a good option because there are so many things you can make with it. From hamburgers on the grill, to stroganoff, spaghetti with meat sauce, meatloaf and the meatballs below, there are more ways than you can imagine to cook ground beef. 

I like the below recipe because you can make as many meatballs as you’d like, use what you need and freeze the rest for later. It’s also a good recipe to let your children help out with. They can mix up the meatball ingredients for you and form them into balls. Who doesn’t enjoy squishing things up in a bowl and then rolling them into little balls? Sounds like fun to me.

If you have a very busy life, and who doesn’t, the next time you’re visiting the store Ikea, consider buying some of their pre-made frozen Swedish meatballs. You can follow the package instructions for cooking the meatballs and then serve them with the sour cream sauce below. 

This recipe is shared with us by Jennifer Ostenson of Johns Creek. She says that it is by far one of her family’s favorite dishes. I bet your family will enjoy it too.

Sour Cream Meatballs – Serves 6
preheat oven to 275 degrees
ingredients:

  • rice or egg noodles

meatball ingredients:

  • 1½ lbs. ground beef
  • ¼-½ c. sour cream 
  • 2 t. salt
  • ¼ t. pepper
  • ½ t. garlic powder
  • 1 T. butter

gravy ingredients:

  • 1 c. sour cream
  • ¼ t. garlic powder
  • ½ t. sugar
  • 2 t. dried dill
  • canned beef broth, optional

prep:

In a large bowl combine all of the meatball ingredients except butter. It should be soft but hold its shape. 

Shape meat mixture into about 35 small balls and chill in fridge for about 15 minutes. 

After you prepare the meatballs, bring a large pot of water to a boil to cook egg noodles or prepare rice, to serve meatball over. 

Cook the noodles or rice at the same time you bake the meatballs.

In large skillet, melt butter and brown meatballs. 

Pour off juices from skillet and set aside.

Transfer meat balls to baking dish and bake at 275 degrees for about 10 minutes.

While meatballs bake, put all of the gravy ingredients in skillet and add juices from meat ball pan (or substitute beef broth if desired). 

Stir together and heat just until bubbly. 

Serve meat balls over egg noodles or rice and top with gravy.
