Summer Cooking Classes Scheduled at Barrington Hall
Chef John Wilson will lead locals in learning to make summer favorites.
Want to learn to make tamales? How about spiced cornish game hens? Both are on the schedule for Chef John Wilson's summer cooking classes at Barrington Hall.
Taught out of the historic home's spacious kitchen, students will learn how to prepare a full meal - from main course to dessert - while they explore recipes from American, classic European and international cuisines.
Each class takes place on a Tuesday night from 6:30 p.m.-9:30 p.m. Here's the lineup:

- June 25, 2013: “Tamale Workshop”—Masa; Spicy Chicken Tamales; Black Bean, Green Chile and Cheddar Tamales
- July 9, 2013: “Summer on the Mediterranean”—Ricotta and Asparagus Tart; Summer Spiced Cornish Game Hens; Yogurt Panna Cotta with Honey
- July 23, 2013: “Summer in Italy”—Green Lentil Spread; Pasta Timballo; Pan-Seared Scallops with Charred Pepper Sauce
- August 6, 2013: “Fresh Fig Dinner”—Figs with Prosciutto Oil, Honey and Balsamic; Fig and Walnut Stuffed Chicken Breasts
- August 20, 2013: “End of Summer Canning”—Curried Apple Chutney; Tomato Black Bean Salsa; Peach Preserves
Each class costs $50/person and includes all materials, plus food. Guests will sample their creations throughout the evening, while enjoying complimentary wine. A free mini tour of Barrington Hall is also included.
Chef John Wilson is the owner of Culinary Vacations, Inc., and a certified chef and graduate of the Culinary Institute of America in Hyde Park, N.Y. He has appeared in Atlanta on local news shows including: Noonday Atlanta, Good Morning Atlanta, Good Day Atlanta, and CNN Healthwatch. When not in Europe, Chef Wilson is the Culinary Director for Perimeter College in Atlanta.
