Passover, Easter, and the Myth of the Egg

Some legend, some lore... and more

It's that season again. Time to celebrate with the ever-present chicken egg at the center of attention.  Whether you celebrate Easter or Passover this season seems to focus on the egg. So I started wondering, what's up with the egg? I spent some time digging into the history, and here's what I've found. During the Christian festival of Easter the custom of giving eggs at Easter celebrates new beginnings. Eggs represent fertility and new life.  It's believed by some that the egg represents the resurrection of Jesus, showing his unending life. During the Jewish holiday of Passover eggs are dipped into salt water to represent the tears Jews suffered in slavery. During our families Passover Seder, my Bubbe (Grandmother) would always say, “Eggs…

Thanksgiving Recipes: How to Cook a Turkey

If you need a new recipe for your Thanksgiving turkey, give one of these non-traditional twists a try.

There are many ways to cook everyone’s favorite holiday bird. Each family has its own special technique for cooking a turkey, whether it's using an old family recipe, adding a secret ingredient or shopping at a certain store in town that helps make the turkey taste all the better. If you're hosting Thanksgiving this year, you can try any of the recipes below to add a new kick to your feast. If you're attending someone else’s dinner, hopefully their turkey will taste as good as one of these! Just the name of this recipe makes my mouth water. An Allrecipes.com user contributes this Greek take on turkey, which combines ground beef and pork with tangerine juice, rice and other ingredients for an in-bird stuffing. This one requires no pre-made …

Cool Desserts: Whipped Topping to the Rescue

Help yourself to some cool and creamy summertime desserts. The thing that both of these recipes have in common is whipped topping.

Okay, okay I know what you might be thinking, “Why are you touting whipped topping? A real cook would whip her own cream. How lazy can you get?” Um, pretty lazy.  Look at it this way; you’re in a hurry (imagine that), you want a good dessert and you want it fast. Enter, stage left, whipped topping. Please know that if you prefer to whip your own cream for these recipes you can definitely do that.  I’ve been making the refrigerator fruit pie below for over 30 years and nobody’s complained, except when it’s gone. For that recipe, if I wanted to invest extra time it would be with a homemade crust instead of a store bought one. Enjoy your summer, whip out the topping and make a quick, easy and delicious dessert. The Oreo Ice Cream dessert is …

Sour Cream Meatballs, Great Family Dinner

Swedish meatball recipe can be prepared in advance and frozen.

I don’t know about you, but I’m always on the hunt for something new to fix for dinner. There are lots of good options but sometimes it’s hard to come up with a fresh idea.  Ground beef is always a good option because there are so many things you can make with it. From hamburgers on the grill, to stroganoff, spaghetti with meat sauce, meatloaf and the meatballs below, there are more ways than you can imagine to cook ground beef.  I like the below recipe because you can make as many meatballs as you’d like, use what you need and freeze the rest for later. It’s also a good recipe to let your children help out with. They can mix up the meatball ingredients for you and form them into balls. Who doesn’t enjoy squishing things up in a bowl and …

What To Do When You're A Bad Cook

Tips on feeding the masses when you're less than the best in the kitchen.

Magazines, moms and television try to make cooking look so easy. But there are those of us out there who really don't get along with our kitchens. It's a constant battle between good and evil; it can turn ugly when stoves are left and skin accidentally gets burned. There aren't enough therapists in the world to ease the tension between a novice cook and a sadistic kitchen. Still, here are a few pointers for surviving the daily encounter. What really helped me tackle my fear of cooking (okay, it isn’t all fear – truthfully, cooking kind of bores me) is reminding myself that I can cook something. Even if it’s only done badly, it’s still cooking! At least that’s what I keep telling myself. I think I'm right. I usually am, anyway.

Frugal Foodie: Coconut Curry Chicken

A mild but filling curry that is gluten and casein free.

Saturday night dinner was our first gluten-free, casein-free dinner. I wanted to start right, with a meal that was yummy, filling and designed to show that even though we’re cutting out wheat and dairy products, they can still expect to eat well. After browsing recipes on several GFCF food blogs, I decided to try Woggle-Bug’s Coconut Curry Chicken. What was wonderful about this recipe is that I was able to feed our family of five for approximately $8.00 with plenty of leftovers. The minus is that compared to other curries I’ve had, this one was very mild—my husband felt it was somewhat bland. If I made this again, I think I would add some cayenne pepper to increase the heat and also throw in some pineapple to give it some sweetness. Still…

Frugal Foodie: Adventures with Kale Chips

Baking kale is a simple way to create a healthy and tasty snack.

Kale is a leafy vegetable that is related to wild cabbage. In recent years, kale has been hailed as a kind of super  vegetable because of its rich nutrient content.  Some cancer studies seem to indicate that kale may help lower your risk for ovary, prostate, colon and breast cancer.  Despite all this, before this past weekend, I had never tasted kale. I’ve heard family members talk about cooking kale the same way you’d cook collard or mustard greens, but neither of those are a favorite in my immediate family, so there was never a reason to test out the concept. Then I heard about kale chips. If you google kale chips, you’ll see that they’ve been something of a food blog trend in the last few months. To be honest, I’m not sure who started …
